Crockpot Paleo Pumpkin Sausage Soup

This soup is perfect for fall and winter with it’s warm and dense texture and flavor. With all the pumpkin that will most likely now go on sale after the holidays it’s the perfect time to stock up on some pumpkin to make a variety of different recipes with it.

I knew a cold front was coming in this week so I wanted to make a big pot of soup for my husband and I to have for lunches all week. There’s nothing better than a warm bowl of soup when it is freezing outside. It got down to the 30’s here in Paris Texas today so it was the perfect thing to warm me up mid afternoon and fill me up!

I am all about saving time when it comes to cooking and this recipe definitely meats that quality.  If you don’t have a crockpot or don’t use a crockpot regularly I highly suggest purchasing one! That’s what I used for this recipe and it literally took me 5 minutes to prepare. That’s it. Fastest recipe ever. Not to mention, I only had to cook once and it will last us for a couple days worth of meals.

Now, I don’t have a large family yet so I don’t have the issue of one crockpot lasting only one meal because it has to serve the whole family. It’s just Luke and I right now, so that does make it a little more simple for me at this point in time, however I have a solution to that problem for you: buy another crockpot and just double the recipe to last for another meal! Crockpot’s are not that expensive and it is worth the investment if it will save you more time and stress throughout the week when it comes to feeding your family healthy meals!

Pumpkin is the creamy base to this hearty soup which brings a ton of nutritional value! According to this table, pumpkin has a glycemic load of only 2, has a perfect balance of essential fatty acids which is essential to our health and reducing inflammation in our bodies, has only .8 grams of sugar and 100% of the nutrients our bodies need to thrive!

Ingredients:

  • 2 pounds de-thawed sausage (preferably grass-fed. I used deer sausage that my husband hunted. You can also buy high quality grass-fed meats at texasgrassfedbeef.com)
  • 1 29 oz. can pumpkin puree
  • 1 large white onion, diced
  • 2 cups sliced mushrooms
  • 4 cups organic chicken broth
  • 2 Tbsp. italian seasoning
  • 2 cloves garlic, crushed
  • 1 cup canned full fat coconut milk

Directions:

  • Place the sausage, pumpkin, onion, mushrooms, chicken broth, garlic and italian seasoning in a crock pot on low
  • Let sit for 4-6 hours
  • Add in full fat coconut milk last 30 minutes or so and stir
  • Serve immediately or store in the freezer!

This recipe will make about 12, 1 cup servings.

Tip: cut up your onion at the beginning of the week when you have time and you literally just dump everything in and let the crockpot do it’s magic! I chopped up my onion last night and threw all of this in the crock pot at 6 am this morning before I rushed out the door. No excuses for eating healthy people. It can be done.
